Description

  • 4 cups chicken broth
  • 1 cup heavy cream
  • 45 medium potatoes, sliced thinly
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 2 cups kale or spinach, chopped
  • Salt and pepper to taste
  • Red pepper flakes (optional for heat)

Instructions

  1. Start by heating a large pot over medium heat. Remove the sausage from its casing and cook until browned, breaking it apart with a spoon. Set aside, draining excess fat if needed.
  2. In the same pot, add olive oil if necessary, then sauté diced onion and minced garlic until fragrant and translucent.
  3. Stir in the sliced potatoes and cook for a few minutes before pouring in the chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  4. Add the cooked sausage back into the pot. Stir in heavy cream, and season with salt, pepper, and red pepper flakes. Simmer for an additional 5-10 minutes.
  5. In the final minutes, stir in chopped kale or spinach until wilted. Serve hot, garnished with grated Parmesan if desired.
