- 1 lb Italian sausage (mild or spicy)
- 4 cups chicken broth
- 1 cup heavy cream
- 4–5 medium potatoes, sliced thinly
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 2 cups kale or spinach, chopped
- Salt and pepper to taste
- Red pepper flakes (optional for heat)
Instructions
- Start by heating a large pot over medium heat. Remove the sausage from its casing and cook until browned, breaking it apart with a spoon. Set aside, draining excess fat if needed.
- In the same pot, add olive oil if necessary, then sauté diced onion and minced garlic until fragrant and translucent.
- Stir in the sliced potatoes and cook for a few minutes before pouring in the chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
- Add the cooked sausage back into the pot. Stir in heavy cream, and season with salt, pepper, and red pepper flakes. Simmer for an additional 5-10 minutes.
- In the final minutes, stir in chopped kale or spinach until wilted. Serve hot, garnished with grated Parmesan if desired.

- For longer storage, freeze the soup and reheat on the stovetop.
