Description

Boost your protein intake with this delicious and easy high-protein banana bread recipe! Perfect for a post-workout snack or a healthy breakfast, this recipe uses protein powder, Greek yogurt, and other wholesome ingredients to create a moist, flavorful, and protein-packed treat.

Ingredients

Scale
  • 3 ripe bananas, mashed
  • 2 large eggs
  • ½ cup Greek yogurt
  • ¼ cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 ½ cups whole wheat flour (or almond flour for gluten-free)
  • 2 scoops protein powder (whey, casein, soy, or plant-based)
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup chopped walnuts or pecans (optional)
  • Chocolate chips (optional)
  • Cinnamon (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash bananas until smooth. Add eggs, Greek yogurt, coconut oil, and vanilla extract. Mix well.
  3. In a separate bowl, whisk together flour, protein powder, baking soda, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Fold in nuts or chocolate chips, if using.
  6. Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For best results, use very ripe bananas. The riper, the sweeter and moister the bread will be.
  • Adjust the amount of protein powder to your liking, but be mindful of the texture. Too much protein powder can make the bread dry.
  • Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
  • You can freeze slices of banana bread for longer storage.
