- 3 ripe bananas, mashed
- 2 large eggs
- ½ cup Greek yogurt
- ¼ cup melted coconut oil
- 1 teaspoon vanilla extract
- 1 ½ cups whole wheat flour (or almond flour for gluten-free)
- 2 scoops protein powder (whey, casein, soy, or plant-based)
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup chopped walnuts or pecans (optional)
- Chocolate chips (optional)
- Cinnamon (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mash bananas until smooth. Add eggs, Greek yogurt, coconut oil, and vanilla extract. Mix well.
- In a separate bowl, whisk together flour, protein powder, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Fold in nuts or chocolate chips, if using.
- Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- For best results, use very ripe bananas. The riper, the sweeter and moister the bread will be.
- Adjust the amount of protein powder to your liking, but be mindful of the texture. Too much protein powder can make the bread dry.
- Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
- You can freeze slices of banana bread for longer storage.
