- 1 cup ripe bananas (mashed, about 2β3 bananas)
- 1 cup crushed pineapple (with juice)
- 1 cup chopped pecans

Instructions
- Gather all the ingredients. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking soda, baking powder, salt, and ground cinnamon. Whisk together until well blended.
- In a separate bowl, beat the eggs with the vegetable oil, mashed bananas, crushed pineapple (with juice), and vanilla extract. Gradually add this mixture to the dry ingredients, stirring until just combined.
- Preheat your oven to 350Β°F (175Β°C). Grease and flour three 9-inch round cake pans. Pour the batter evenly into the prepared pans and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Once cooled, prepare your cream cheese frosting. Frost the top of one layer, stack the second layer, and repeat the frosting process. Frost the top and sides of the cake, and garnish with additional bananas and pecans.

- Store the cake covered in plastic wrap or aluminum foil for up to 2 days at room temperature or a week in the refrigerator.
- For freezing, wrap individual slices tightly in plastic wrap; they can last for up to 3 months.
