- 2 cups cooked rice (white or brown)
- 1 cup mixed vegetables (bell peppers, broccoli, carrots)
- 2 green onions, chopped
- For the Creamy Yum Yum Sauce:
- 1/2 cup mayonnaise
- 1 tablespoon sriracha (or more for extra heat)
- 1 teaspoon garlic powder
- 1 teaspoon sugar
- 1 tablespoon water (to thin, if necessary)
Instructions
- In a mixing bowl, combine chicken, honey, ginger, soy sauce, sesame oil, and chili flakes. Marinate for at least 20 minutes.
- Heat a large skillet over medium heat and add the marinated chicken. Cook for 8-10 minutes until cooked through and caramelized.
- To serve, add cooked rice to a bowl and top with chicken and veggies. Drizzle with Creamy Yum Yum Sauce and garnish with green onions.
- In a small bowl, whisk together mayonnaise, sriracha, garlic powder, and sugar for the Creamy Yum Yum Sauce.
