Ingredients

Scale
  • 1 pound chicken breast, diced into bite-sized pieces
  • 2 tablespoons honey
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon chili flakes (adjust to taste)
  • 2 cups cooked rice (white or brown)
  • 1 cup mixed vegetables (bell peppers, broccoli, carrots)
  • 2 green onions, chopped
  • For the Creamy Yum Yum Sauce:
  • 1/2 cup mayonnaise
  • 1 tablespoon sriracha (or more for extra heat)
  • 1 teaspoon garlic powder
  • 1 teaspoon sugar
  • 1 tablespoon water (to thin, if necessary)

Instructions

  1. In a mixing bowl, combine chicken, honey, ginger, soy sauce, sesame oil, and chili flakes. Marinate for at least 20 minutes.
  2. Heat a large skillet over medium heat and add the marinated chicken. Cook for 8-10 minutes until cooked through and caramelized.
  3. To serve, add cooked rice to a bowl and top with chicken and veggies. Drizzle with Creamy Yum Yum Sauce and garnish with green onions.
  4. In a small bowl, whisk together mayonnaise, sriracha, garlic powder, and sugar for the Creamy Yum Yum Sauce.

Notes

  • Store leftovers in airtight containers in the fridge for up to 3 days.
  • Keep the sauce separate if possible to maintain consistency.
  • To make it healthier, use brown rice and low-sodium soy sauce.
  • Tofu or tempeh can substitute for chicken for a vegetarian option.
