Ingredients

Scale
  • 3–4 ripe bananas, mashed
  • 1/3 cup plant-based milk (almond, soy, or oat)
  • 1/4 cup melted coconut oil or olive oil
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour (or gluten-free blend)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Grease a loaf pan.
  2. Mash bananas in a large bowl until smooth.
  3. Add plant-based milk, melted coconut oil or olive oil, maple syrup, and vanilla extract to the mashed bananas. Mix well.
  4. In a separate bowl, whisk together whole wheat flour, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Fold in chopped walnuts or chocolate chips, if desired.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let it cool before slicing and serving.

Notes

  • For a moister bread, use very ripe bananas with brown spots.
  • Adjust the amount of maple syrup based on your preferred sweetness.
  • Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
  • Feel free to experiment with different nuts, seeds, or dried fruits for added flavor and texture.
  • To check for doneness, insert a toothpick into the center of the bread. If it comes out with moist crumbs attached, continue baking for a few more minutes. If it comes out clean, the bread is ready.
