Packed with lean ground turkey, fresh vegetables, and aromatic herbs, this hearty soup is easy to prepare and ideal for a satisfying meal. Enjoy the comforting taste of Italy with this wholesome, low-fat recipe that can be customized with greens, beans, or pasta for added variety.

Ingredients

Scale
  • 1 lb ground turkey
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional: spinach or kale for added greens

Instructions

  1. Begin by heating a large pot over medium heat. Add a little olive oil, then cook the ground turkey until browned and cooked through. Break it apart with a spoon as it cooks, ensuring even browning. Once cooked, remove excess fat if necessary and set aside.
  2. In the same pot, add diced onions, carrots, and celery. Sauté until tender, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Loosen browned bits from the bottom of the pot, then add back the cooked ground turkey. Pour in diced tomatoes and chicken broth. Stir in Italian seasoning, basil, oregano, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat to low and let it simmer uncovered for 20-30 minutes. For extra greens, stir in spinach or kale during the last 5 minutes.
  5. Ladle the hot soup into bowls, garnish with fresh herbs if desired, and serve with crusty bread or your favorite side.

Notes

  • You can add beans, zucchini, or bell peppers for variation.
  • For a heartier version, incorporate cooked pasta, rice, or potatoes.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for longer storage.
  • Reheat on the stovetop and add extra broth if needed to loosen the soup.
