  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 cups fresh spinach or kale, chopped

Instructions

  1. In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion, carrots, and celery, cooking until tender, about 5 minutes. Stir in minced garlic and cook for another minute.
  2. Add ground turkey to the pot and break it apart with a spoon. Cook until browned and cooked through, about 7-8 minutes. Season with salt, pepper, oregano, and basil.
  3. Pour in diced tomatoes with their juices and the chicken broth. Bring to a boil, then reduce heat to a simmer. Cook uncovered for 15-20 minutes to meld flavors. Add red pepper flakes if desired.
  4. Add chopped spinach or kale and cook for another 5 minutes until greens wilt. Adjust seasoning as needed. Serve hot.
