Ingredients
Scale
- 2 cups of leftover mashed potatoes
- 1 cup shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 2 tablespoons chopped fresh chives or green onions
- Salt and black pepper to taste
- 1 cup all-purpose flour
- 1/2 teaspoon paprika (optional, for extra flavor)
- Oil for frying (vegetable or canola oil)
Instructions
- In a large mixing bowl, combine the leftover mashed potatoes with shredded cheddar cheese, grated Parmesan, and chopped chives or green onions. Mix well and season with salt and black pepper to taste. Add the egg to help bind the mixture.
- Form the mixture into small balls or patties, about the size of a golf ball or slightly larger. Roll each in all-purpose flour to coat.
- Heat oil in a deep skillet or frying pan over medium-high heat. Carefully add the puffs and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
Notes
- For extra flavor, add a pinch of garlic powder or smoked paprika to the mixture.
- If the mixture is too soft, add more flour until it holds shape.
- Experiment with different cheeses like mozzarella or pepper jack for varied flavors.
- Use fresh mashed potatoes for the best texture and taste if making from scratch.
