Ingredients

Scale
  • 1 lb (450g) ground beef or turkey
  • 1 cup cooked rice or quinoa
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 large carrots, sliced
  • 2 celery stalks, sliced
  • 1 can (14 oz) diced tomatoes
  • 6 cups chicken or vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large bowl, combine ground beef or turkey with diced onion, garlic, cooked rice, salt, pepper, and herbs. Form into small meatballs about 1 inch in diameter. Set aside.
  2. In a large soup pot, heat a tablespoon of olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until vegetables are tender, about 5-7 minutes.
  3. Add the diced tomatoes and broth to the pot. Bring to a boil, then reduce the heat to simmer. Carefully drop the meatballs into the simmering broth. Continue cooking for about 15-20 minutes, or until meatballs are cooked through and flavors meld.
  4. Adjust seasoning with salt, pepper, oregano, and basil. Serve hot, garnished with chopped fresh parsley. Pair with crusty bread or side salad for a complete meal.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For freezing, allow the soup to cool completely, then transfer to freezer-safe containers. Reheat on the stove or microwave.
  • Avoid freezing after adding fresh herbs to preserve flavor.
