  • 1 cup cherry tomatoes, halved (fresh summer produce)
  • 1 cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse with cold water to cool. Prepare the cooked chicken, grilled, roasted, or boiled; check out the guide for shredded chicken.
  2. In a large mixing bowl, combine the cooked pasta, shredded chicken, cherry tomatoes, cucumber, red onion, olives, and feta cheese. Toss gently to combine all ingredients evenly.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper. Drizzle the dressing over the salad and toss to coat thoroughly.
  4. Garnish with chopped parsley. Serve immediately or chill for at least 30 minutes for enhanced flavor.
