  • 2 cups rotini pasta
  • 2 chicken breasts, grilled and diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 bell pepper, diced (any color)
  • 1/2 red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup black olives, sliced
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp oregano
  • Salt and pepper to taste

Instructions

  1. Wash and dice the bell pepper, cucumber, and red onion. Halve the cherry tomatoes.
  2. In a large pot, boil salted water and cook the rotini pasta for 8-10 minutes until al dente. Drain and rinse under cold water.
  3. Season chicken breasts with salt, pepper, and oregano. Grill until cooked through, about 6-7 minutes per side. Let rest before dicing.
  4. In a large bowl, combine pasta, vegetables, grilled chicken, olives, and feta cheese. In a separate bowl, whisk olive oil, lemon juice, garlic, oregano, salt, and pepper; pour over salad and toss to coat.
