- 2 cups rotini pasta
- 2 chicken breasts, grilled and diced
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 bell pepper, diced (any color)
- 1/2 red onion, finely chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup black olives, sliced
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp oregano
- Salt and pepper to taste
Instructions
- Wash and dice the bell pepper, cucumber, and red onion. Halve the cherry tomatoes.
- In a large pot, boil salted water and cook the rotini pasta for 8-10 minutes until al dente. Drain and rinse under cold water.
- Season chicken breasts with salt, pepper, and oregano. Grill until cooked through, about 6-7 minutes per side. Let rest before dicing.
- In a large bowl, combine pasta, vegetables, grilled chicken, olives, and feta cheese. In a separate bowl, whisk olive oil, lemon juice, garlic, oregano, salt, and pepper; pour over salad and toss to coat.
