  • 1 bell pepper, sliced

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 cup shredded lettuce
  • â…“ cup hummus
  • 4 whole wheat wraps
  • Tzatziki sauce, for serving

Instructions

  1. In a mixing bowl, combine the diced chicken breast with olive oil, oregano, thyme, salt, and pepper. Mix until the chicken is evenly coated.
  2. Heat a skillet over medium heat and add the seasoned chicken. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through. Add the sliced bell peppers and onions, cooking for an additional 3-5 minutes until tender.
  3. While the chicken is cooking, wash and chop your fresh vegetables: dice the cucumbers, halve the cherry tomatoes, and shred the lettuce.
  4. To assemble the wraps, spread hummus on each whole wheat wrap, top with the chicken and vegetable mixture, then roll tightly and secure with a toothpick if needed. Slice in half for serving.
