- 1 medium head of cauliflower, cut into florets
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- Β½ red onion, finely chopped
- ΒΌ cup fresh parsley, chopped
- ΒΌ cup olives, sliced
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Wash and cut the cauliflower into small florets.
- In a large bowl, combine cauliflower florets, cherry tomatoes, cucumber, bell pepper, red onion, parsley, and olives.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper. Pour over the salad and toss well.
- Cover the salad and refrigerate for at least 30 minutes before serving.
