Description

Ingredients

  • 1 medium head of cauliflower, cut into florets
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • Β½ red onion, finely chopped
  • ΒΌ cup fresh parsley, chopped
  • ΒΌ cup olives, sliced
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Wash and cut the cauliflower into small florets.
  2. In a large bowl, combine cauliflower florets, cherry tomatoes, cucumber, bell pepper, red onion, parsley, and olives.
  3. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper. Pour over the salad and toss well.
  4. Cover the salad and refrigerate for at least 30 minutes before serving.
