  • 1 lb of beef stew meat, cut into bite-sized pieces
  • 2 tablespoons of vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 4 medium potatoes, diced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups beef broth
  • 1 cup frozen green beans
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium-high heat. Add beef stew meat and cook until browned on all sides, about 5-7 minutes. Remove excess fat.
