- 1 lb of beef stew meat, cut into bite-sized pieces
- 2 tablespoons of vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 4 medium potatoes, diced
- 1 can (14.5 oz) diced tomatoes
- 6 cups beef broth
- 1 cup frozen green beans
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat vegetable oil in a large pot over medium-high heat. Add beef stew meat and cook until browned on all sides, about 5-7 minutes. Remove excess fat.
- Add chopped onion and garlic to the pot and sauté for 2-3 minutes until translucent.
- Stir in sliced carrots and celery and cook for another 5 minutes.
- Add diced potatoes, canned tomatoes, beef broth, salt, and pepper. Bring to a boil.
- Reduce heat, return browned beef to the pot, cover, and simmer for 1 to 1.5 hours until beef is tender and vegetables are cooked through.
- In the last 10 minutes, stir in frozen green beans and heat through. Adjust seasonings as needed.
- Serve hot, garnished with fresh parsley, with crusty bread or a side salad.
