- 1 lb (450g) fresh shrimp, peeled and deveined
- 4 cups seafood or chicken broth
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 medium onion, chopped
- 1 bell pepper, diced
- 1 cup diced tomatoes
- 1–2 teaspoons chili flakes (to taste)
- 1 teaspoon cumin
- Salt and pepper, to taste
- Juice of 1 lime
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add minced garlic and chopped onion, and sauté until fragrant and translucent.
- Once the onion is tender, add diced bell pepper and cook for another 2-3 minutes. Next, toss in the fresh shrimp and stir well until they begin to change color.
- Pour in the seafood or chicken broth, along with diced tomatoes, chili flakes, cumin, salt, and pepper. Bring the mixture to a boil, then reduce heat and let it simmer for 10-15 minutes.
- Check for seasoning and adjust as needed. Squeeze in the lime juice for an extra zing, and then remove from heat. Serve hot, garnished with fresh cilantro.
