  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 4 cups chicken broth
  • 1 cup heavy cream or coconut cream for dairy-free option
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: fresh parsley for garnish

Instructions

  1. Season chicken with salt, pepper, and thyme. Heat olive oil in a large pot or Instant Pot, cook chicken until golden. Remove and set aside.
  2. In the same pot, sauté diced onions, carrots, and celery until tender, about 5 minutes. Add garlic and cook for another minute.
  3. Return chicken to the pot, pour in chicken broth, bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Remove chicken, shred with forks, and return to the soup. Stir in heavy cream or coconut cream, simmer for 5-10 minutes.
