- 1 pound fresh salmon, skinless and boneless
- 1/2 cup breadcrumbs (whole wheat for a healthier option)
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 teaspoon lemon juice
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 1 avocado
- 1/4 cup Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon lime juice
Instructions
- Start by preparing the salmon. Cut the fresh salmon into chunks.
- In a large mixing bowl, combine the salmon chunks, breadcrumbs, parsley, minced garlic, lemon juice, black pepper, and salt. Mix until well combined.
- Shape the mixture into balls, approximately 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
- Bake the salmon balls in a preheated oven at 375ยฐF (190ยฐC) for 15-20 minutes until golden brown.
- While the salmon balls are baking, blend the ripe avocado, Greek yogurt, olive oil, and lime juice until smooth for the sauce.
- Serve the salmon balls warm with the creamy avocado sauce drizzled on top or on the side.
