- 1 cup heavy cream or milk
- 2 tbsp butter or vegan butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh thyme or rosemary (optional)
Instructions
- Peel and thinly slice the sweet potatoes using a mandoline slicer for even thickness.
- In a saucepan, melt butter over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
- Pour in heavy cream or milk, season with salt, pepper, and herbs if desired, then simmer for a few minutes.
- Preheat oven to 375°F (190°C). Grease a baking dish with butter or non-stick spray.
- Layer sweet potato slices in the dish, pour some of the sauce over each layer, then sprinkle with cheese. Repeat until all ingredients are used, finishing with cheese on top.
- Bake uncovered for 40-45 minutes until bubbling and golden brown. Optionally, add crushed crackers or breadcrumbs halfway through for a crunchy topping.
Notes
- Use firm sweet potatoes for easy slicing and cooking.
- Adjust the amount of cheese and herbs to suit your taste.
- For a healthier version, substitute heavy cream with low-fat milk or plant-based alternatives.
- Allow the casserole to cool before storing in an airtight container.
- Reheat in the oven at 350°F (175°C) for about 20 minutes.
