  • 4 chicken thighs, skinless and boneless
  • 2 medium zucchinis, sliced
  • 1 bell pepper, chopped (red or yellow)
  • 1 medium onion, sliced
  • 3 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). In a bowl, combine olive oil, oregano, garlic powder, paprika, salt, and pepper. Coat the chicken thighs with the mixture.
  2. Wash and slice zucchinis and bell pepper. Place in a bowl, drizzle with olive oil, and season with salt and pepper. Toss until evenly coated.
  3. On a large sheet pan, arrange seasoned chicken thighs in the center and surround them with the prepared vegetables.
