- 4 chicken thighs, skinless and boneless
- 2 medium zucchinis, sliced
- 1 bell pepper, chopped (red or yellow)
- 1 medium onion, sliced
- 3 tablespoons olive oil
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C). In a bowl, combine olive oil, oregano, garlic powder, paprika, salt, and pepper. Coat the chicken thighs with the mixture.
- Wash and slice zucchinis and bell pepper. Place in a bowl, drizzle with olive oil, and season with salt and pepper. Toss until evenly coated.
- On a large sheet pan, arrange seasoned chicken thighs in the center and surround them with the prepared vegetables.
- Bake for 30-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the vegetables are tender and caramelized.
