- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup cooked mixed vegetables (carrots, peas, corn)
- 1/2 cup beef or vegetable broth
- 1 cup shredded cheese (cheddar, mozzarella, or a blend)
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C). Pierce potatoes several times with a fork and bake for 45-60 minutes until tender. Let cool slightly.
- In a skillet over medium heat, heat olive oil. Add diced onions and garlic; cook until fragrant. Add ground beef, salt, and pepper; cook until browned. Drain excess fat.
- Stir in cooked vegetables and broth; simmer for 5-7 minutes. Slice baked potatoes in half lengthwise. Scoop out most of the flesh into a bowl.
- Mash potato flesh with salt and pepper, then mix with the beef mixture. Spoon filling back into potato shells and top with shredded cheese.
- Place in the oven at 375°F (190°C) for 15 minutes until cheese melts and bubbles. Garnish with parsley before serving.
