Instructions

  1. Preheat oven to 400°F (200°C). Pierce potatoes several times with a fork and bake for 45-60 minutes until tender. Let cool slightly.
  2. In a skillet over medium heat, heat olive oil. Add diced onions and garlic; cook until fragrant. Add ground beef, salt, and pepper; cook until browned. Drain excess fat.
  3. Stir in cooked vegetables and broth; simmer for 5-7 minutes. Slice baked potatoes in half lengthwise. Scoop out most of the flesh into a bowl.
  4. Mash potato flesh with salt and pepper, then mix with the beef mixture. Spoon filling back into potato shells and top with shredded cheese.
