- 2 cups of graham cracker crumbs
- 1/2 cup of melted unsalted butter
- 3 (8 oz) packages of cream cheese, softened
- 1 cup of granulated sugar
- 3 large eggs
- 1 teaspoon of vanilla extract
- 1 teaspoon of ground cinnamon
- 1 cup of sour cream
- 1 cup of crushed churros (store-bought or homemade)
- For topping: cinnamon sugar and additional churros for garnish
Instructions
- Combine graham cracker crumbs with melted butter until evenly coated. Press firmly into the bottom of a greased 9-inch springform pan and chill.
- In a large bowl, beat cream cheese and sugar until smooth. Mix in vanilla and cinnamon. Add eggs one at a time, then gently fold in sour cream until well combined.
- Pour the filling over the crust and bake at 325°F (163°C) for 50-60 minutes, until edges are set but the center slightly jiggles. Cool completely.
- Sprinkle crushed churros evenly over the cooled cheesecake. Mix cinnamon sugar and sprinkle on top. Garnish with whole churros and chill for at least 4 hours or overnight before serving.

- Use a food processor to finely crush churros or place in a sealed bag and crush with a rolling pin for texture variety.
