Ingredients

Scale
  • 2 cups of graham cracker crumbs
  • 1/2 cup of melted unsalted butter
  • 3 (8 oz) packages of cream cheese, softened
  • 1 cup of granulated sugar
  • 3 large eggs
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of ground cinnamon
  • 1 cup of sour cream
  • 1 cup of crushed churros (store-bought or homemade)
  • For topping: cinnamon sugar and additional churros for garnish

Instructions

  1. Combine graham cracker crumbs with melted butter until evenly coated. Press firmly into the bottom of a greased 9-inch springform pan and chill.
  2. In a large bowl, beat cream cheese and sugar until smooth. Mix in vanilla and cinnamon. Add eggs one at a time, then gently fold in sour cream until well combined.
  3. Pour the filling over the crust and bake at 325°F (163°C) for 50-60 minutes, until edges are set but the center slightly jiggles. Cool completely.
  4. Sprinkle crushed churros evenly over the cooled cheesecake. Mix cinnamon sugar and sprinkle on top. Garnish with whole churros and chill for at least 4 hours or overnight before serving.

Notes

  • Use a food processor to finely crush churros or place in a sealed bag and crush with a rolling pin for texture variety.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 1 month. Add fresh churros before serving if stored in advance.
