Description

Slow Cooker Beef and Noodles is a hearty and flavorful crockpot dinner that combines tender shredded beef with delicious egg noodles. Perfect for busy weeknights or leisurely weekends, this easy and comforting recipe is a family favorite and a great way to enjoy a savory, wholesome meal with minimal effort.

Ingredients

Scale
  • 2 lbs beef chuck or shaved beef for sandwiches
  • 1 packet of onion soup mix
  • 3 cups beef broth
  • 2 cups egg noodles or wide pasta noodles
  • 1 cup chopped carrots and celery (optional)
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions

  1. Start by trimming excess fat from the beef and cutting it into manageable pieces, or use shaved beef for quick cooking. In a skillet, heat olive oil over medium-high heat and sear the beef for about 5 minutes to enhance flavor.
  2. Transfer the seared beef to your crockpot. Add chopped carrots, celery, garlic, and the onion soup mix. Pour in the beef broth to keep everything moist and flavorful. Season with salt and black pepper as needed.
  3. Set your crockpot to low setting and cook for 8 hours or until the beef is tender and easy to shred.
  4. During the last 30 minutes of cooking, add the egg noodles directly into the crockpot. Cover and continue cooking until the noodles are tender.
  5. Taste for seasoning and adjust salt and pepper as desired. Serve hot, garnished with fresh parsley.

Notes

  • For a richer flavor, add a splash of Worcestershire sauce or a splash of soy sauce during cooking.
  • Use fresh herbs like thyme or rosemary for added aroma, added during the last hour of cooking.
  • Cook noodles separately if you prefer firmer noodles that won’t soak up too much broth.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently.
