  • 1 bell pepper, sliced (any color)
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper to taste. Heat the olive oil in a large skillet over medium-high heat. Sear the chicken for about 5-7 minutes on each side until golden brown.
  2. Remove chicken from the skillet and set aside. In the same skillet, add sliced onion and bell pepper, sauté for 4-5 minutes. Add minced garlic in the last minute.
  3. Pour in the chicken broth and bring to a simmer. Add heavy cream, paprika, and thyme, stirring to combine. Return the seared chicken to the skillet to cover with the sauce.
  4. Let chicken simmer in the sauce for about 15-20 minutes or until fully cooked through. Serve garnished with chopped parsley.
