  • 4 cups chicken or vegetable broth
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon crushed red pepper flakes (adjust to taste)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Start by heating olive oil in a large pot over medium heat. Add sliced spicy sausage and cook until browned, about 5-7 minutes. Remove the sausage and set aside.
  2. In the same pot, sauté chopped onions, carrots, and celery until tender, about 5 minutes. Add minced garlic in the last minute for flavor.
  3. Stir in smoked paprika, crushed red pepper flakes, salt, and black pepper. Cook for another minute to release the spices’ aroma. Add diced tomatoes and cook for a few minutes.
  4. Pour in chicken or vegetable broth and add rinsed lentils. Return cooked sausage to the pot. Bring to a boil, then reduce heat and simmer uncovered for 30-40 minutes until lentils are tender. Stir occasionally.
  5. Taste and adjust seasonings. For a creamier texture, blend part of the soup with an immersion blender if desired. Serve hot, garnished with chopped parsley or cilantro.
