- 2 salmon fillets (about 6 oz each)
- 3 tablespoons of Sriracha sauce
- 2 tablespoons of honey
- 1 tablespoon of soy sauce
- 1 tablespoon of lime juice
- 1 cup of jasmine rice
- 1 cup of mixed vegetables (bell peppers, carrots, cucumbers)
- 2 green onions, chopped
- Sesame seeds for garnish
- Salt to taste
Instructions
- In a bowl, combine Sriracha, honey, soy sauce, and lime juice. Marinate the salmon fillets for at least 30 minutes.
- Heat a non-stick frying pan over medium heat. Cook the marinated salmon for 4-5 minutes on each side or until cooked through.
- Prepare jasmine rice according to package instructions and fluff with a fork. Layer rice in bowls, followed by mixed vegetables and cooked salmon.
- Garnish with chopped green onions and sesame seeds, serve immediately, and enjoy!
Notes
- For more heat, add extra Sriracha or red pepper flakes to the marinade.
- Extra marinade can be drizzled over salmon while cooking for enhanced flavor.
