Ingredients

  • 2 salmon fillets (about 6 oz each)
  • 3 tablespoons of Sriracha sauce
  • 2 tablespoons of honey
  • 1 tablespoon of soy sauce
  • 1 tablespoon of lime juice
  • 1 cup of jasmine rice
  • 1 cup of mixed vegetables (bell peppers, carrots, cucumbers)
  • 2 green onions, chopped
  • Sesame seeds for garnish
  • Salt to taste

Instructions

  1. In a bowl, combine Sriracha, honey, soy sauce, and lime juice. Marinate the salmon fillets for at least 30 minutes.
  2. Heat a non-stick frying pan over medium heat. Cook the marinated salmon for 4-5 minutes on each side or until cooked through.
  3. Prepare jasmine rice according to package instructions and fluff with a fork. Layer rice in bowls, followed by mixed vegetables and cooked salmon.
  4. Garnish with chopped green onions and sesame seeds, serve immediately, and enjoy!

Notes

  • For more heat, add extra Sriracha or red pepper flakes to the marinade.
  • Extra marinade can be drizzled over salmon while cooking for enhanced flavor.
  • This recipe can be made gluten-free by using gluten-free soy sauce.
