- 12 lasagna noodles
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup chopped tomatoes
- 1 cup chopped bell peppers
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 can black beans, drained and rinsed
- 1 cup salsa
- 1 cup sour cream
- Fresh cilantro for garnish
Instructions
- In a large skillet over medium heat, cook the ground beef until browned. Add taco seasoning and water as per instructions, cooking until well combined.
- While beef is cooking, chop tomatoes and bell peppers. Mix with the cooked beef and add a splash of salsa.
- Layer 3 noodles at the bottom of a greased baking dish. Spoon in half of the beef mixture and sprinkle with cheese. Repeat, finishing with noodles, salsa, and cheese on top.
- Preheat the oven to 350°F (175°C). Cover and bake for 25 minutes, then uncover and bake for an additional 15 minutes until cheese is bubbly and golden.
Notes
- This dish can be stored in an airtight container in the fridge for up to 3 days or frozen for a month.
- Serve with fresh avocado, sour cream, and tortilla chips for a delightful meal.
- To make it vegetarian, substitute ground beef with lentils or black beans.
- Add jalapeños or spicy salsa for extra heat.
