- 4 large bell peppers (red, yellow, or green)
- 1 lb boneless, skinless chicken breasts or thighs, diced
- 1 cup fresh pineapple chunks (or canned pineapple, drained)
- 1/4 cup teriyaki sauce
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 cup cooked jasmine or basmati rice
- 1 tsp sesame oil (optional)
- Green onions, sliced (for garnish)
- Sesame seeds (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and place them in a baking dish. Bake for about 10 minutes to soften slightly.
- While the peppers are baking, heat 1 tbsp of olive oil in a skillet over medium heat. Add chopped onion and minced garlic, sauté until fragrant. Add the diced chicken and cook until browned and cooked through. Stir in pineapple chunks and teriyaki sauce. Let simmer for 5-7 minutes to meld flavors. Drizzle with sesame oil if using.
- In a large bowl, combine cooked rice with the chicken and pineapple mixture. Adjust seasoning if needed. Once the peppers are slightly cooled, fill them generously with the mixture.
- Return the stuffed peppers to the oven and bake for an additional 15-20 minutes, until tender and hot. Garnish with sliced green onions and sesame seeds before serving for added flavor and texture.
