Ingredients
Scale
- 2 cups cooked chicken, shredded or sliced (see chicken recipes for inspiration)
- 4 large tortillas or wraps (preferably whole wheat or gluten-free)
- 1/2 cup Thai peanut sauce (recipe or store-bought)
- 1 cup fresh lettuce, chopped
- 1/2 cup shredded carrots
- 1/2 cup thinly sliced cucumbers
- 1/4 cup chopped fresh cilantro
- 1 tablespoon lime juice
- Optional: chopped peanuts, sliced jalapeños, or green onions for garnish
Instructions
- Prepare the chicken: cook thoroughly by grilling, baking, or sautéing, then shred or slice into thin strips.
- Warm the tortillas in a skillet for about 30 seconds per side or microwave wrapped in a damp cloth for 20 seconds.
- Spread a generous layer of Thai peanut sauce over each tortilla, covering the center.
- Layer the chicken, lettuce, carrots, cucumbers, and cilantro onto the tortillas. Drizzle with lime juice and add optional garnishes like chopped peanuts or jalapeños.
- Fold the sides inward and roll tightly to seal the filling inside. Slice and serve immediately.
Notes
- Wrap leftovers tightly in plastic wrap or foil and store in the refrigerator for up to 24 hours.
- Reheat briefly in microwave or enjoy cold for a quick lunch.
- For best flavor, prepare just before serving to preserve vegetable crispness.
