Ingredients
Scale
- 3 ½ cups all-purpose flour
- 1 packet active dry yeast (2 ¼ teaspoons)
- ½ cup granulated sugar
- ½ teaspoon salt
- ¾ cup pumpkin puree
- ½ cup warm milk
- ⅓ cup unsalted butter, melted
- 2 large eggs
- 2 teaspoons ground cinnamon
- 1 teaspoon vanilla extract
- ½ cup brown sugar
- 3 teaspoons ground cinnamon
- ½ cup chopped pecans or walnuts (optional)
- 1 cup powdered sugar
- 2 oz cream cheese, softened
- 2–3 tablespoons milk or heavy cream
- ½ teaspoon vanilla extract
- ½ cup unsalted butter
- 1 cup brown sugar
- ½ cup heavy cream
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, combine yeast, warm milk, and a pinch of sugar. Let sit for 5-10 minutes until frothy.
- Add pumpkin, melted butter, eggs, vanilla, sugar, cinnamon, and salt. Mix well.
- Gradually add flour, one cup at a time, until a soft dough forms. Knead for 8-10 minutes until smooth. Let rise in a warm spot for 1 hour or until doubled in size.
- Mix brown sugar and cinnamon for filling. Roll dough into a 16×12-inch rectangle on a floured surface. Spread melted butter and sprinkle cinnamon-sugar mixture and nuts if using.
- Roll up tightly from the long side, then cut into 12-15 slices. Place in a greased baking dish. Cover and let rise for 30-45 minutes.
- Preheat oven to 350°F (175°C). Bake rolls for 20-25 minutes until golden brown.
- Meanwhile, prepare caramel glaze: melt butter, add brown sugar, cream, and vanilla. Boil 2 minutes, then cool slightly. Prepare cream cheese frosting by beating cream cheese, powdered sugar, vanilla, and milk until smooth.
- Drizzle caramel and cream cheese glaze over slightly cooled rolls. Add optional toppings for extra indulgence.
