Description

This Creamy Cauliflower Soup is one of our most popular comfort soup recipes, perfect for cozy nights and nourishing meals. Velvety, flavorful, and easy to make, it’s a delicious homemade soup that will become a staple in your culinary repertoire.

Ingredients

Scale
  • 1 head of fresh cauliflower, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil or butter
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or coconut milk for a dairy-free version
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish
  • Optional: 1 cup grated cheese (cheddar or Parmesan)

Instructions

  1. Start by preparing the cauliflower by chopping it into bite-sized pieces.
  2. Heat olive oil or butter in a large pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for another minute.
  3. Add chopped cauliflower to the pot, stirring well. Pour in the broth, ensuring the cauliflower is covered. Bring to a boil, then reduce heat and simmer for 20-25 minutes until cauliflower is tender.
  4. Using an immersion blender or transferring the mixture to a blender, puree until smooth and creamy. Return to the pot if needed.
  5. Stir in heavy cream or coconut milk, season with salt and pepper. Garnish with herbs or cheese if desired.

Notes

  • For vegan options, use coconut milk and omit cheese.
  • To thicken the soup further, simmer uncovered for additional 10 minutes or add cornstarch mixed with cold water.
  • Enhance flavor with spices like nutmeg or cayenne pepper.
