Ingredients
Scale
- 1 head of fresh cauliflower, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil or butter
- 4 cups vegetable or chicken broth
- 1 cup heavy cream or coconut milk for a dairy-free version
- Salt and pepper to taste
- Fresh thyme or parsley for garnish
- Optional: 1 cup grated cheese (cheddar or Parmesan)
Instructions
- Start by preparing the cauliflower by chopping it into bite-sized pieces.
- Heat olive oil or butter in a large pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for another minute.
- Add chopped cauliflower to the pot, stirring well. Pour in the broth, ensuring the cauliflower is covered. Bring to a boil, then reduce heat and simmer for 20-25 minutes until cauliflower is tender.
- Using an immersion blender or transferring the mixture to a blender, puree until smooth and creamy. Return to the pot if needed.
- Stir in heavy cream or coconut milk, season with salt and pepper. Garnish with herbs or cheese if desired.
Notes
- For vegan options, use coconut milk and omit cheese.
- To thicken the soup further, simmer uncovered for additional 10 minutes or add cornstarch mixed with cold water.
- Enhance flavor with spices like nutmeg or cayenne pepper.
