This creamy Tomato Pasta is a quick and easy 20-minute dinner that combines fresh tomatoes with a rich sauce, making it a perfect choice for any night. Ideal for impressing guests or enjoying a comforting meal at home.
Ingredients
Scale
- 2 cups of pasta (any type you prefer)
- 1 cup of fresh tomatoes, diced
- 2 tablespoons of olive oil
- 1 small onion, chopped
- 2 cloves of garlic, minced
- 1/2 cup of heavy cream
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Begin by boiling a pot of salted water. Once boiling, add your pasta and cook according to package instructions until al dente.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3 minutes. Then, add minced garlic and sauté for another minute until fragrant.
- Stir in the diced fresh tomatoes and cook for about 5-7 minutes until they soften and release their juices.
- Reduce the heat and stir in the heavy cream, allowing it to simmer for a couple of minutes. Drain the cooked pasta and add it to the skillet, tossing everything together until well-coated with the sauce.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat on the stovetop with a splash of water or cream to loosen the sauce.
- For added flavor, serve with grated Parmesan cheese and fresh basil.
