- 8 oz (225g) of pasta (spaghetti or penne)
- 2 large zucchinis, sliced
- 4 ripe tomatoes, chopped
- 3 tablespoons olive oil
- 2 cloves of garlic, minced
- 1 teaspoon dried basil
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Wash the fresh tomatoes and zucchinis thoroughly.
- In a large skillet, heat olive oil over medium heat, add minced garlic, and sauté for 30 seconds.
- Add chopped tomatoes and sliced zucchinis to the skillet and sauté for 5-7 minutes until tender.
- Boil salted water in a separate pot, cook pasta according to package instructions until al dente, and reserve a cup of pasta water.
- Drain the pasta and add it to the skillet, toss with the vegetables, and add reserved pasta water to create a sauce.
- Season with salt, pepper, and dried basil, then serve hot with Parmesan cheese.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
