  • 8 oz (225g) of pasta (spaghetti or penne)
  • 2 large zucchinis, sliced
  • 4 ripe tomatoes, chopped
  • 3 tablespoons olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Wash the fresh tomatoes and zucchinis thoroughly.
  2. In a large skillet, heat olive oil over medium heat, add minced garlic, and sauté for 30 seconds.
  3. Add chopped tomatoes and sliced zucchinis to the skillet and sauté for 5-7 minutes until tender.
  4. Boil salted water in a separate pot, cook pasta according to package instructions until al dente, and reserve a cup of pasta water.
  5. Drain the pasta and add it to the skillet, toss with the vegetables, and add reserved pasta water to create a sauce.
  6. Season with salt, pepper, and dried basil, then serve hot with Parmesan cheese.

Notes
