  • 1 pound ground sausage or Italian sausage
  • 4 cups chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup chopped spinach or kale
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Optional: red pepper flakes for a spicy kick
  • Salt and pepper to taste
  • Optional: Grated Parmesan cheese for topping

Instructions

  1. Sauté the sausage and onion in a skillet until browned, then transfer to the crockpot.
  2. Add chicken broth, diced tomatoes, Italian seasoning, salt, and pepper.
  3. Cover and cook on low for 4-6 hours, allowing flavors to meld.
  4. About 15 minutes before serving, add tortellini and spinach, then cook until the pasta is tender.
  5. For Instant Pot, set to sauté mode, cook sausage and onion until browned, then add garlic and Italian seasoning for another minute.
  6. Pour in broth and tomatoes, lock lid, and cook on high pressure for 5 minutes.
  7. Quick-release, open lid, add tortellini and spinach, and simmer until pasta is cooked, then serve hot.
