Instructions
- Gather all ingredients: dice the potatoes, chop the greens, and mince the garlic.
- In a large pot, heat olive oil over medium heat. Sauté diced onion and minced garlic until fragrant and translucent.
- Add sliced vegan sausage and cook until slightly browned. Stir in diced potatoes and cook for 5 minutes.
- Pour in vegetable broth and coconut milk, add dried thyme, salt, and pepper. Bring to a boil, then reduce to simmer and cook until potatoes are tender, about 15-20 minutes.
