Description

Ingredients

  • 200g pasta of your choice (spaghetti or penne work great)
  • 250g fresh ricotta cheese
  • 1 large lemon, zested and juiced
  • 200g fresh spinach leaves
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Parmesan cheese, for serving

Instructions

  1. Gather all ingredients ensuring spinach is fresh and ricotta is creamy.
  2. In a large pot, bring salted water to a boil, add pasta, and cook until al dente. Reserve about 1 cup of pasta water before draining.
  3. In a skillet, heat olive oil over medium heat, add spinach, and sauté until wilted, about 2-3 minutes. Season with salt and pepper.
  4. Combine the drained pasta with sautéed spinach, add ricotta, lemon zest, and lemon juice. Use reserved pasta water to reach desired consistency, toss well and serve.

Notes

  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
  • Reheat pasta in a skillet with a splash of water or olive oil if it seems dry.
  • For extra flavor, sprinkle with Parmesan cheese and additional lemon zest before serving.
