- 200g pasta of your choice (spaghetti or penne work great)
- 250g fresh ricotta cheese
- 1 large lemon, zested and juiced
- 200g fresh spinach leaves
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Parmesan cheese, for serving
Instructions
- Gather all ingredients ensuring spinach is fresh and ricotta is creamy.
- In a large pot, bring salted water to a boil, add pasta, and cook until al dente. Reserve about 1 cup of pasta water before draining.
- In a skillet, heat olive oil over medium heat, add spinach, and sauté until wilted, about 2-3 minutes. Season with salt and pepper.
- Combine the drained pasta with sautéed spinach, add ricotta, lemon zest, and lemon juice. Use reserved pasta water to reach desired consistency, toss well and serve.
Notes
- Leftovers can be stored in an airtight container in the fridge for up to 3 days.
- Reheat pasta in a skillet with a splash of water or olive oil if it seems dry.
- For extra flavor, sprinkle with Parmesan cheese and additional lemon zest before serving.
